"Emu - Life Just Got Healthier"
(review reprinted with permission from Emu's
Zine)
This unique book is going to be a "must have"
for those serious recipe book
collectors.
Produced by the American Emu Association, it is a collection of favorite recipes
from "people who eat emu every day." And they must eat it a lot
- there are over 200 recipes for main dishes alone! If that's not enough,
check out the appetizers, sandwiches and other selections!
The 500 recipe book contains an introduction by Louisiana Chef Dale Bourgeois
expounding the merits of cooking with this low-cholesterol red meat, along with
nutritional information on both emu meat and emu egg. In a delightful
twist, recipes calling for egg are given the "emu equivalent" followed
by the number of chicken eggs you could substitute. For example, if a
recipe calls for 1 cup of emu egg, you may substitute 4 chicken eggs.
The emu in this book has been roasted, grilled, slow cooked, Bar B Q'd, deviled,
scalloped, smothered, stuffed and even shipwrecked. It's Italian, French,
Cajun, Creole, Polynesian Mexican, American, Korean and who knows what
else - that bird may not fly, but it has gone all over the world.
$12.95 includes shipping and handling charges.
